Pumpkin Lasagne

My seventeen year old son first made this dish about a year ago, and we liked it so much that we have made it regularly since.

Ingredients

500g (1 lb) butternut pumpkin, chopped
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, chopped
1 teaspoon sugar
1 tablespoon dry white wine
1 packet instant lasagne (enough for 3 layers in an average lasagne dish)
250g (8oz) ricotta cheese
100g (3oz) grated mozarella cheese
100g (3oz) grated cheddar cheese

Tomato Sauce

1 tablespoon olive oil
1 medium onion, chopped
1 clove garlic, chopped
2 teaspoons sugar
2 tablespoons chopped fresh basil leaves
1 teaspoon cracked black pepper
2 x 400g (14oz) cans chopped tomatoes

Boil, steam or microwave pumpkin until soft; drain, mash. Heat oil in pan, add onion and garlic, cook, covered, until onion is soft. Add sugar and wine, cook, stirring, until almost all the liquid has evaporated. Stir onion mixture into pumpkin; mix well.

For the tomato sauce heat oil in pan, add onion and garlic; cook, covered, over low heat until onion is soft. Add sugar, basil, pepper and undrained tomatoes. Simmer, covered, about 20 minutes or until sauce is thickened slightly.

Line the bottom of a lasagne dish with instant lasagne sheets. spread with half the pumpkin mixture, half the ricotta, then a third of the tomato sauce. Repeat layers, ending with a third layer of lasagne sheets and remaining tomato sauce; sprinkle with combined mozarella and cheddar cheeses. Bake in moderate oven (180c or 350F) 35-40 minutes or until pasta is tender. If the top is browning too much, cover lightly with foil.

Serve with salad and crusty or garlic bread. :P

Well we are just about on the end of the bears pumpkins so I got busy and made this Lasagne and all I can say is "Its Great!" thanks caraway
