Veggie Chili

This is my sister-in-law's recipe and it is addictive...enjoy!

SinD’s Veggie Chili

1 pkg Veggie Ground Round
1 can lentils
1 can kidney beans
1 can diced tomatoes
1 or 2 cans sliced mushrooms
2 cloves garlic
1 onion
1 pkg Old El Paso Chili spices
A smidge of cumin
A squirt of ketchup
A squirt of vinegar
A splash of olive oil
Optional: any additional veggies you fancy

Put a splash of olive oil (or whatever oil you like to use) in the pot. Slice your onion thinly. Dice up the garlic into small bits. Sauté the onion and garlic on low heat. When onions are cooked, add in tomatoes, ground round and the package of chili spice and a bit of cumin. Sometimes I add a little bit of extra chili powder to make it spicier. Turn up the heat slightly and let simmer for a few minutes. Add in all canned goods and a squirt of ketchup & vinegar. Stir well. Be careful not to put too much vinegar or it will ruin the chili. You want just enough to give it some zip. Let simmer until the beans are soft.
