Pumpkin Pie

Pumpkin Pie

Preheat oven 180°C 350°F Gas No 4

375 ml 1 1/2 cups pumpkin
(I like fresh but you can use canned pumpkin -- watch out for the can's of pie filling as they are a pour in shell and bake)

30 ml 2 tablespoons flour all purpose (plain flour)
250 ml 1 Cup sugar
5 ml 1 teaspoon ginger
5 ml 1 teaspoon cinnamon
dash of nutmeg
2 ml 1/2 teaspoon mace
1 ml 1/4 tsp salt
3 eggs
125 ml 1/2 cup milk

pastry for 1 23 cm (9inch) pie

Combine pumpkin, flour, sugar, and salt. Beat eggs, add milk. Combine Egg mixture with pumpkin; mix well. Pour into pastry lined pie plate. Bake until firm.

My way buy a pre-made pie shell take it out of the freezer. Mix all the ingredients for the pie in 1 bowl (dump it all together) mix well (I use a mixer but tend to make 2 or more pies at a time.

Pour into pie shells and bake in a preheated oven for 35-40 min

After its baked let cool can be topped with whipped cream.

It can also be frozen after its baked and then when you want to serve it just defrost in the fridge.

No worries about tinned pie mix tho, we don't get that here (only apple or apricot etc) and in fact I don't think we get canned pumpkin either...

Anyhow, I'll give it a go!

If you need to use fresh pumpkin, I prefer this you can cook it in two ways clean, peal and boil it or cut in sections and place in the oven to "roast" off the outer peal.

I've only clean pealed and boilled but its a lot of work since the pealing part can be difficult. It can be boiled for alittle less time then potatoes.

The problem here is that the size of pumpkin does matter as the smaller the pumpkin the fewer the pies (they also have more flavour) but having said that we had a nice small-med pie that has so much pumpkin that we had to make a run to the store for eggs and sugar!

I think we might have different varieties of pumpkin here. We have butternut and what is called "Queensland Blue which has bluish coloured skin. I think from what I have seen on TV you have something that looks the same as a QLD blue, but has orange skin.... the butternut might be a good choice as the flesh is quite sweet anyway (and my favourite choice)

Well I was thinking that same thing about different varieties

But any squash could be tried -- Pumpkin doesn't have much flavour on its own.

My Step-father has also used mashed up carrots and turnips as he had a lot of them one year and used them-- with out the carrots the colouring just didn't look "right"

The pumpkin pie was Great different to anything I have had before but very moreish LoL so its on my list, thanks Uni for the chance to try something different…

Pumpkin is very good for you. It has no cholesterol, low in fat and sodium and its rich in vitamins, in particular beta carotene and vitamin A. On top of being good for your health, it tastes great too. That's why it is eaten in almost every country in the world. Pumpkin & Raisin Muffins

Ingredients:

1 cup pumpkin
3 ½ cups flour
1 cup sugar
2 eggs
1 ¼ cup 50% milk 50% water
1/4 cup soft butter
1 cup raisins
4 teaspoons baking powder
½ teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon salt

Preheat oven to 400 degrees, put muffin cups into muffin tins, cream butter and sugar until fluffy, beat in pumpkin and eggs, dredge raisins in ½ cup of flour, sift remaining flour and spices together, pour milk into a mixing bowl, mix in dry ingredients by hand until just mixed, stir in raisins, spoon mix into paper cases in muffin tin, bake at 400 degrees for 20 - 25 minutes.

Pumpkin Fudge

Ingredients:

1 cup milk
3 cups sugar
3 tablespoons light corn syrup
½ cup pumpkin
pinch salt
½ teaspoon cinnamon
½ teaspoon allspice
4 tablespoons butter
1 teaspoon vanilla

combine milk, sugar, corn syrup, pumpkin, and salt in a large pan, cook over medium heat until boiling, stirring constantly, when mixture comes to a full boil, reduce heat and simmer until mixture comes to the softball stage. remove from heat, beat in cinnamon, allspice, margarine, and vanilla, cool, then beat until thick and mixture looses it's gloss, spoon into buttered dish.

Pumpkin Dip

Ingredients:

2 cups pumpkin puree
1 cup brown sugar
1 tsp. ground cinnamon
½ tsp. ginger
½ tsp. nutmeg
1 package cream cheese, softened

Place pumpkin puree and cream cheese into a large bowl and mix together, add all other ingredients,
mix ingredients together until smooth and creamy.
refrigerate at least four hours or overnight, serve with crackers, celery, carrots, etc, for a lighter dip, substitute sour cream for cream cheese.

LWD Glad you liked the pie recipe.

You and RB must like Pumpkin to plant 52 plants worth!
So what are you going to make with all those pumpkins?

The one think I like is that you can freeze pumpkin and it keeps really well.

I don't know if you get it over where you are Uni, but we get a pumpkin called Jap Pumpkin, its a softer sweeter version, absolutely yum,,,,(and easier to cut)

Pumpkin Fudge - ok, now I think I will give that a go being a fudge fan from way back lol

Pumpkin Rum Mousse

Ingredients:
1cup pumpkin
1 envelope unflavored gelatin
½ cups sugar
4 eggs
¼ cup rum
½ teaspoon cinnamon
½ teaspoon ginger
¼ teaspoon mace
¼ teaspoon ground cloves
1 cup whipped cream
Crushed nuts, almonds, cherries,

Warm the rum in a small sauce pan, slowly add in gelatin, stirring constantly, heat and stir until gelatin is completely dissolved, set aside and allow to cool slightly, beat eggs in a large mixing bowl, gradually add the sugar and beat for 3 to 4 minutes until it is thick and light, in a second bowl, combine and mix pumpkin, cloves, cinnamon, ginger and mace, combine the rum gelatin and the egg mixtures, stirring well, gently add in the cream, pour into small serving dishes, refrigerate for several hours until firm or overnight, decorate with whipped Cream cherries and nuts.

Ok I went in to this big grocery store to buy mace and I couldn't find it on the shelves anywhere .... so I see someone who works in the store and I ask "do you have any mace"

then informed me that mace was illegal and therefore they couldn't carry it any more :o

so then I go to the customer service counter cause I think this person doens't know there is a spice .... so I ask at the customer service counter if they had any mace.

They informed me that mace was illegal and therefore they didn't carry it!

So I asked to see the manager cause his employees need to know that there is a spice and a pepper spray both called Mace .... he said that he knew that but "head office will not let them carry "mace as its illegal" :lol: :lol:

8) He then suggested I go to the other grocery store ... as he know they have it because that is where his wife buys it! He was even kind enought to call over and have it at the customer service desk for me! 8)

If we evern end up living there again I will stock up on Mace .... think I will be charged with an illegal substance! :roll:
