I'd like to start sharing recipes, particularly Malaysian. It represents Malay, Chinese and Indian cooking in general but Malaysian version (which can be really different and extremely delicious!) I am also gonna try to modify or provide a Malaysian or Western Malaysian fusion where possible :)

For a start, something simple n healthy:)

Grilled Mackerel
2 Mackerel medium size or fish of your choice - preferably whole - gutted and cleaned, incl the head
2 tbsp of tumeric powder
a pinch of salt
juice of half a lemon or lime
1-2 tbsp or veg oil

marinate the fish with all ingredients and leave for abt 5-10 mins. Then grill open or use griddle pan until cooked.

for the sauce/dip
1tbsp of tamarind paste
half a cup of water
half medium sized onion (chopped/diced small)
some cut chillies (according to taste)
2 tsp of sugar (unrefined preferred)

mix everything together and voila :)...serve with lovely steam rice ...(brown rice even better)...enjoy...

easy fried noodles - malaysian style

250g spaghetti/egg noodles (boil as per instruction, drain and put aside)
3 tbsp of veg oil
1 tsp sesame seed oil
one big onion (chopped finely or blend)
200g of diced chicken (you can use prawns or other meat)
2 cloves of garlic (chopped finely or blend)
1tbsp chilli paste* (optional; or you can put less or as desired)
4tbsp of dark/thick soya sauce (if you can find dark sweet soya sauce of Malaysian or Indonesian produce, then skip the sugar)
2 eggs (stir in a bowl and put aside)
100g of spinach (can use green cabbage too)
50g bean sprouts
1 tbsp brown sugar
salt & pepper to taste

1-heat up oil (medium to high fire)
2-add the onions, garlic and chillies for abt 5 mins (or until you can smell the aroma) - constantly stirring to not burn
3-then add the noodles/pasta and pour in the soya sauce on top and stir, lower the fire
4-make some kind of hole in the centre by pushing the noodles to the side all around the wok, put in the eggs and stir lightly, turn up the fire
5-cover the eggs by pushing back all the noodles to the centre and leave it for abt 30-60 seconds
6-now you can stir everything evenly, even scraping the bottom of your wok where the eggs was and start strirring vigorously
7-throw in your veg
8-season and add the sugar and stir for a min....and enjoy...if its not hot enough have it with some cut chillies (fresh or soaked in vinegar)
